At the forefront of Spanish gastronomy, Paco Morales, a member of a family devoted body and soul to the hotel industry, inherited a love for the trade. In 2010 he obtained his first Michelin star with his restaurant Paco Morales in Bocairente. His great project, Noor, opened its doors on March 17, 2016, in his hometown, Córdoba. Noor represents a gastrocultural project that seeks to reinterpret Andalusian cuisine through historical recovery and arduous research on the gastronomy of Al-Andalus. At Noor, Paco puts in value the blending of the three cultures that without a doubt forms the base of the great Andalusian kitchen. The two Michelin stars earned in little more than three years and the nearly unanimous support of clients, colleagues, and critic, validate the power of this investigative journey through culinary history.
