Francisco de Santiago has been leading cultural and culinary tours since 2001. In addition to his hometown of Mexico City, he regularly leads visitors from all around the world through the streets of Guanajuato, Querétaro, Zacatecas, San Luis Potosí, Michoacán, Puebla, Oaxaca, Morelos, and Hidalgo—among others. He has collaborated in the making of documentaries, journalistic coverage, culinary investigations, tours both gastronomic and cultural, and top classes for chefs and restaurant business owners. Some of his clients include The Culinary Institute of America (CIA), the British Broadcasting Company (BBC), and chefs Rick Bayless, Sean O’Toole, John Sollis, Rick Stein, and Tommy Payne.
