Eric J. Sauber ‘07

Assistant Professor, Culinary Arts, Culinary Institute of America

Eric J. Sauber is a lecturing instructor of culinary arts at CIA in Hyde Park, NY. At the core of his teaching, he instills a sense of courtesy, community, and respect rooted in responsibility for sustainable practices. This is achieved in the kitchen laboratory, where he encourages students to maximize the usage of any singular ingredient, minimizing waste and enhancing flavor and profitability.

Before returning to his alma mater to teach in 2022, Sauber had a wide-ranging culinary career shaped by leadership roles across some of California’s most-respected culinary institutions. His experience includes serving as personal chef to film and television producer Jerry Bruckheimer in Beverly Hills, CA; corporate executive chef at Wolfgang Puck Catering in Hollywood; executive chef roles with Patina Restaurant Group at the LA Music Center/Walt Disney Concert Hall in Los Angeles, and at Market Café at Park Place in Irvine; executive sous chef at Créme de la Créme Catering in Costa Mesa, and The Pacific Club in Newport Beach; and chef de partie at Auberge du Soleil in the heart of California’s Napa Valley.

In addition to his associate degree in culinary arts from CIA, Sauber holds a Bachelor of Business Administration in Logistics, Materials, and Supply-Chain Management from the University of Massachusetts Global. He is also a Certified Hospitality Educator Professional (CHEP). (Instagram: @prochefcuts)
