Duangporn “Bo” Songvisava & Dylan Jones
Chefs & Co-Founders, Bo.lan (Bangkok, Thailand)
Bo.lan was founded by Chefs Duangporn Songvisava and Dylan Jones on the belief that Thailand’s culinary heritage is something to be deeply valued and preserved. Combining Bo’s nickname and Dylan’s name, Bo.lan also echoes the Thai word for “ancient,” reflecting a profound respect for Thai culinary heritage. The restaurant is defined by its commitment to uncompromising flavors, seasonality, and close collaboration with local farmers, promoting biodiversity and sustainable practices. A pioneer of zero-waste dining in Bangkok, Bo.lan has worked towards achieving zero waste to landfill since 2016.
Chef Bo’s passion extends beyond the kitchen into education, nutrition, and holistic approaches to food, while Dylan’s deep immersion in Thai culture and language informs their interpretation of rare and ancient recipes. Together, they have established Bo.lan as a critically acclaimed and influential institution, contributing meaningfully to the evolution of modern Thai cuisine while supporting local communities and preserving culinary traditions.
