Do-Seop Kim
Leader, Korea Cuisine Research Team, Korean Heritage Agency (Seoul, Korea)
Do-Seop Kim has devoted his life to preserving and advancing the authenticity of traditional Korean cooking methods. In 2018, he was designated Holder of National Intangible Cultural Heritage No. 38, Joseon Royal Court Cuisine, in recognition of his efforts to preserve and transmit this important culinary tradition. Drawing on his family's culinary heritage and the traditions of ancestral households, he works to preserve traditional techniques while exploring their contemporary applications.
As leader of the Korean Cuisine Research Team at a government-established institution dedicated to preserving and promoting traditional foods, Kim oversees menu development, operations, and culinary research initiatives. Two programs he developed, Jeongsik Haerin and Gohojae, were recognized by the Ministry of Culture, Sports and Tourism as Outstanding Cultural Products.
Kim is also committed to educating the next generation of culinary professionals through university appointments, industry-based professorships, and lectures on traditional Korean foods. He collaborates with culinary schools, educational organizations, and the Korean Restaurant Association to expand awareness and appreciation of Korean food culture.
In recognition of his contributions to traditional food culture, culinary technology, and the food industry, Kim has received numerous honors, including the Presidential Citation (2025), the Minister of Culture, Sports and Tourism Citation, and the Commissioner of the Cultural Heritage Administration Citation.
